| Moroccan Chicken Meatball |

Ingredients: 2 lbs ground chicken ½ cup chopped green oilves (optional) ¼ cup raisins, rinsed and chopped 1/8 cup apricots, rinsed and finely chopped 1/8 cup green onions, chopped 1/8 cup chopped fresh flat-leaf parsley 2 Tbsp grape seed oil 1 clove garlic, minced 1 tsp paprika ½ tsp ground cumin ½ tsp ground ginger ½ tsp turmeric ¼ tsp cinnamon ¼ tsp salt 1/8 tsp freshly ground pepper
2 cups chicken stock 2 Tbsp apricot jam 1/8 cup chopped fresh cilantro (optional)
Directions: 1.Combine all of the ingredients (expect the chicken stock, jam and cilantro) and mix with the ground chicken. 2.Scoop out 1 oz at a time (we suggest a cookie scoop), and roll into balls. Set on parchment paper. 3.In a large, heavy bottomed skillet, heat 1 Tbsp oil on medium high heat. Add half of the chicken balls and cook, turning often (approx. 10-15 min.) 4.Remove chicken balls, add second Tbsp of oil if necessary and cook the other half of chicken, also turning often. 5.Remove second batch of cooked chicken and set aside with first batch. 6.Deglaze pan with the chicken stock, scraping bits of flavour and stirring. 7.Once deglazed, strain if necessary, return liquid to pan and stir in jam. 8.Add chicken balls, heat through and add cilantro to mixture just before serving.
Serve with couscous or rice. |
