Stuffed French Baguettine |

Sometimes the simplest of recipes can be a real hit. Please the lunch crowd with this knockout chicken salad sandwich recipe. Great for picnics or sliced smaller for finger foods.
Ingredients
- 3 cups of cooked chicken - chopped
- 1 celery stick - finely chopped
- 1 green onion - finely chopped
- 1/2 red bell pepper - finely chopped and blotted dry
- 4 au paine dore french baguettines available at Portions
- 1 package (10 oz.) of frozen spinach - thawed and squeezed dry
- 1/2 cup of mayonnaise
- 1/4 cup sundried tomatoes - rehydrated and finely chopped available at Portions
- 1/4 lbs. of cream cheese
- 1/4 tsp. better than salt seasoning available at Portions
- 1 clove of garlic - minced
Directions- Bake Au Pain Dore baguettines according to package directions.
- Cut bread lengthwise.
- Mix cream cheese and mayonnaise until combined.
- Add all of the additional ingredients, except chicken, and mix thoroughly.
- Stir in chicken.
- Divide the mixture into 4 equal amounts and spread on bottom halves of baguettines.
- Place tops on baguettines and wrap tightly with plastic wrap.
- Refrigerate for a minimum of 2 hours or overnight.
- Remove plastic wrap and slice diagonally when ready to serve. Enjoy.
